  • ¼ cup Tamari (low sodium) or soy sauce
  • 2 Tablespoon Thai sweet red chili sauce
  • juice of 1 lime
  • 1 teaspoon maple syrup or honey
  • ⅓ cup chopped cashews
  • ¼ cup chopped scallions
  • ¼ cup chopped fresh cilantro
  • ¼½ cup shredded carrots
  • Sesame seeds for topping
  • 1 head butter lettuce leaves

Instructions

  1. Heat: Heat a pan over medium-high heat, add sesame oil, onions, garlic, and ginger. Cook until onions are translucent.
  2. Cook the chicken: Add ground chicken to the pan, season, and cook until browned.
  3. Make the sauce: Mix soy sauce, chili sauce, lime juice, and honey in a bowl.
  4. Combine: Add the sauce to the chicken, sprinkle cashews, and cook for 2 minutes. Stir in carrots, scallions, and cilantro.
  5. Fill: Assemble lettuce wraps by filling each leaf with the chicken mixture and topping with sauce and sesame seeds.
