Deviled Eggs
- 6 boiled eggs
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon creme fraiche or soft cream cheese or sour cream
- 2 tablespoons smoked paprika (not hot)
- ½ teaspoon sea salt or kosher salt
- ½ teaspoon ground black pepper

- Hard Boil the Eggs: Prepare 6 eggs by boiling them until hard boiled. You can boil, use an Instant Pot, or steam them according to your preferred method. Once cooked, peel the eggs and slice each in half lengthwise.
- Prepare the Yolk Mixture: Gently pop out the yolks from the halved eggs by pushing from the back to avoid tearing the whites. In a medium bowl, combine the egg yolks with 2 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 1 tablespoon fresh lemon juice, 1 tablespoon creme fraiche (or soft cream cheese or sour cream), 2 tablespoons smoked paprika, ½ teaspoon sea salt or kosher salt, and ½ teaspoon ground black pepper. Use a hand mixer to blend everything together until smooth and creamy.
- Fill the Egg Whites: Transfer the yolk mixture to a large zip-top bag or piping bag fitted with a large star tip. Pipe the filling carefully back into the hollowed egg whites for a neat and attractive presentation.
