Pie Crust:

  • 1 recipe for double pie crust

Apple Filling:

  • 2 1/4 lbs Granny Smith Apples (peeled, cored, and thinly sliced)
  • 1 1/2 tsp cinnamon
  • 8 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1 egg (+ 1 Tbsp water, for egg wash)

Instructions

  1. Prepare the Pie Crust: Make the pie crust according to the recipe instructions and chill it. Preheat the oven to 425˚F.
  2. Make the Filling: Melt butter in a saucepan, add flour, water, and sugar. Simmer until thickened.
  3. Prepare the Apples: Peel, core, and slice the apples. Toss with cinnamon and the prepared sauce.
  4. Assemble the Pie: Roll out the bottom crust, fill with apple mixture, and create a lattice top with the second crust.
  5. Bake: Brush the top with egg wash and bake at 425˚F, then reduce heat to 350˚F until golden and bubbly.
