Main Ingredients:
- 5 strips uncooked bacon (chopped)
- 1 large yellow onion (diced)
- 1 red bell pepper (diced)
- 3 cloves garlic (minced)
- 1 lb ground beef (455g)
Spices and Seasonings:
- 1 Tablespoon brown sugar
- 1 Tablespoon chili powder
- 1 Tablespoon ancho chili powder
- 1 ½ teaspoons smoked paprika
- 1 teaspoon cumin
- 1 teaspoon onion powder
- ¾ teaspoons ground black pepper
- ½ teaspoon salt
- ⅛ teaspoon cayenne pepper
Additional Ingredients:
- 1 ¼ cup beef broth (295ml)
- 15 oz can dark red kidney beans (lightly rinsed and drained)
- 15 oz can black beans (lightly rinsed and drained)
- 14.5 oz can diced fire roasted tomatoes (undrained)
- 7 oz can fire roasted green chilis
- ¼ cup tomato paste
- 1 Tablespoon Worcestershire sauce
- Preferred toppings (sour cream, shredded cheddar cheese, and corn chips)
- Cook Bacon: Place chopped uncooked bacon in a large pot and cook until crisp. Remove bacon and drain grease, leaving 1 ½ Tablespoons in the pot.
- Sauté Vegetables: Add onion and pepper to the pot and cook until softened.
- Add Garlic: Stir in minced garlic and cook until fragrant.
- Brown Beef: Add ground beef to the pot, breaking it apart as it cooks. Add sugar and spices, stirring well.
- Incorporate Ingredients: Add remaining ingredients and cooked bacon to the pot, stirring thoroughly.
- Simmer: Bring to a boil, then reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
- Serve: Dish out the chili and top with sour cream, shredded cheddar cheese, and corn chips.
