Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper and set it aside.
  2. Prepare Wet Ingredients: In a large mixing bowl, combine the mashed bananas, nut butter, maple syrup, egg (or flax egg), and vanilla extract. Mix until smooth and well combined.
  3. Combine Dry Ingredients: Add the oat flour, flaxseed meal, cinnamon, baking soda, and salt to the wet mixture. Stir until just combined. Fold in the oats, hemp hearts, chia seeds, chocolate chips, and walnuts (if using). Let the dough rest for 5 minutes.
  4. Scoop the Dough: Using a large cookie scoop (about 3 tablespoons per cookie), portion the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Press a few extra chocolate chips on top of each cookie.
