  • 3 tbsp red onions, finely chopped
  • ¼ cup spinach, chopped
  • ¼ cup tomatoes, diced
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh dill, chopped

Instructions

  1. Preheat the oven: Preheat your oven to 375ºF (190ºC) to ensure it’s ready for baking the quiche.
  2. Prepare the egg mixture: In a large bowl, whisk together the eggs, cottage cheese, salt, pepper, and garlic powder thoroughly. Then fold in the chopped red onions, tomatoes, feta cheese, spinach, and fresh dill until evenly combined.
  3. Line the baking dish: Place the large tortilla into a round baking dish, making sure it fully covers the bottom and sides. If the tortilla isn’t large enough, use two or three tortillas overlapping slightly to line the dish completely.
  4. Pour the egg mixture: Carefully pour the prepared egg mixture into the tortilla-lined baking dish, spreading it evenly.
  5. Bake the quiche: Place the dish in the preheated oven and bake for 20 minutes. Check doneness by gently wiggling the baking dish; if the egg mixture still jiggles, continue baking for an additional 5 to 10 minutes until completely set.
  6. Cool and remove: Once cooked through, remove the quiche from the oven and allow it to cool slightly in the pan. Use a spatula to carefully release it from the dish if needed.
