For the Soup:
- 1 tablespoon olive oil
- 1 yellow onion, finely diced
- 1 carrot, finely diced
- 1 celery rib, finely diced
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Bones from leftover cooked turkey
- 4 cups water
- 4 cups unsalted vegetable broth
- 1 cup pasta, broken into bite-size pieces (such as broken up capellini)
- 1 cup leftover turkey meat, shredded or chopped
For Garnish:
- Fresh parsley
- Lemon juice (optional)
- Sauté Vegetables: Heat olive oil in a large pot over medium-high heat. Add onions, carrots, and celery. Cook, stirring occasionally, for about 5 minutes. Add garlic and stir for about 30 seconds.
- Add Broth and Turkey Bones: Add leftover cooked turkey bones, water, and vegetable broth. Bring to a boil, season with salt and pepper, then reduce heat to simmer for 30 minutes.
- Prepare Soup: Discard turkey bones. Add pasta and leftover turkey meat. Adjust seasoning as needed. Be cautious to remove any small bones that may fall into the broth.
- Finish and Serve: Boil the soup for 5 to 10 minutes until pasta is cooked. Garnish with parsley and enjoy with a squeeze of lemon juice.
