Ingredients

Scale

Filling

  • 2 tablespoons butter
  • 3/4 cup onion, diced
  • 3/4 cup carrots, diced
  • 3/4 cup celery, diced
  • 4 garlic cloves, minced
  • 4 cups leftover turkey, shredded or diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh chopped thyme
  • 1 teaspoon fresh chopped rosemary
  • 2 cups gravy

Topping

  • 4 cups mashed potatoes
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the shepherd’s pie.
  2. Sauté Vegetables: Heat a large oven-safe skillet over medium-high heat. Add butter, diced onion, celery, carrots, salt, and pepper. Cook until the vegetables are softened, about 3 minutes. Add minced garlic and sauté for another 30 seconds until fragrant.
  3. Add Turkey and Veggies: Stir in the shredded leftover turkey, frozen peas, frozen corn, fresh thyme, rosemary, and gravy. Mix well to combine all ingredients evenly.
  4. Prepare Potato Topping: Warm the leftover mashed potatoes slightly to make them easier to spread. Then evenly spread the mashed potatoes over the turkey and vegetable filling in the skillet.
  5. Bake the Pie: Place the skillet in the preheated oven and bake for 25 to 30 minutes, allowing the flavors to meld and the filling to heat through.
  6. Broil to Brown: For a nicely browned top, switch the oven to broil and broil the pie for an additional 5 to 8 minutes until the mashed potatoes develop a golden crust.
  7. Garnish and Serve: Remove from the oven, sprinkle fresh chopped parsley on top for color and freshness, then serve warm.

Notes

  • Use leftover turkey and mashed potatoes for a quick and easy meal.
  • If you prefer, substitute frozen mixed vegetables for peas and corn.
  • Ensure the skillet you use is oven-safe (cast iron recommended) to seamlessly transfer from stovetop to oven.
  • Adjust herbs to your taste; sage can be used instead of rosemary or thyme.
  • To make this dish ahead, assemble and refrigerate before baking; bake when ready.
