- Prepare the Crust: Preheat your oven to 325°F (163°C). Grease the bottom and sides of a 9-inch springform pan. Wrap the outside of the pan in multiple layers of heavy-duty aluminum foil to prepare for a water bath.
 
- Make the Chocolate Cheesecake Filling: Bring a medium pot of water to a low simmer. Melt bittersweet chocolate in a bowl over the pot. Process cream cheese, sugars, cocoa powder, eggs, egg yolks, and cream. Fold in melted chocolate and vanilla. Pour over crust.
