Ingredients

Scale

Cake Mix Ingredients

  • 1 box strawberry cake mix (plus ingredients listed on the box: usually oil, eggs, and water)

Cream Cheese Swirl

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Strawberry Glaze

  • 1 cup fresh strawberries, mashed
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water

Garnish

  • Fresh strawberries, for topping
  • Drizzle of white chocolate (optional)

Instructions

  1. Preheat and Prepare Cake Batter: Preheat your oven to 350°F (175°C). Prepare the strawberry cake mix according to the instructions on the box, typically combining it with oil, eggs, and water.
  2. Pour Batter into Pan: Grease your baking dish and pour the prepared cake batter evenly into it.
  3. Make Cream Cheese Mixture: In a bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until completely smooth and creamy.
  4. Drop Cream Cheese onto Batter: Spoon dollops of the cream cheese mixture evenly over the surface of the cake batter.
  5. Swirl Cream Cheese: Using a knife or skewer, gently swirl the cream cheese mixture into the cake batter to create a marbled effect.
  6. Bake the Cake: Place the cake in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Prepare Strawberry Glaze: While the cake bakes, combine the mashed fresh strawberries, granulated sugar, and lemon juice in a saucepan over medium heat.
  8. Cook and Thicken Glaze: Stir the mixture until the sugar dissolves, then add the cornstarch-water slurry. Continue to cook and stir until the glaze thickens to a syrupy consistency.
  9. Cool and Glaze Cake: Allow the cake to cool slightly before drizzling the thickened strawberry glaze generously over the top of the cake.
  10. Garnish and Serve: Decorate the cake with fresh strawberries and, if desired, drizzle with white chocolate to finish your showstopper dessert.

Notes

  • Use fresh, ripe strawberries for the best flavor in the glaze and garnish.
  • Ensure the cream cheese is softened to room temperature for easy mixing and a smooth swirl.
  • If you prefer a less sweet glaze, reduce the granulated sugar to 1/4 cup.
  • White chocolate drizzle is optional but adds a lovely decorative touch and extra sweetness.
  • This cake is best served within 2 days and can be stored covered in the refrigerator.
