Instructions

  1. Prepare Ingredients: Drain and rinse one can of chickpeas thoroughly. Melt 1 cup of the vegan dark chocolate chips in a microwave or using a double boiler until smooth.
  2. Blend Mixture: Add the rinsed chickpeas, 1/2 cup nut butter, and melted chocolate chips into a food processor or blender. Blend for 45-60 seconds until the ingredients are well combined and form a smooth batter.
  3. Form Truffle Balls: Using a cookie scoop, portion the batter onto a parchment-lined baking sheet. Place the balls in the freezer for 15-20 minutes to firm up. Once firm, remove and roll each into a smooth ball, then return to the freezer for another 10 minutes.
  4. Melt Coating Chocolate: While the truffles harden, melt the additional 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil until smooth.
  5. Coat Truffles: Take the truffles from the freezer and dip them thoroughly into the melted chocolate coating. Place coated truffles back onto the parchment-lined baking sheet and put them into the freezer to harden completely.
